The following soup recipe uses condensed tomato soup as a base and you add pasta, cheese, and vegetables to make it tasty and delicious. Use any kind of pasta you like. Fresh cheese tortellini works well too and has an even shorter cooking time than macaroni.
You can even take this soup with you on a journey, if you pack it in a thermos. If you do that, take the cheese in a separate container, so you can sprinkle it on top of the soup before eating it. Parmesan cheese would be just as good as the cheddar cheese in this easy soup recipe. This tomato soup recipe makes enough for four servings and it takes about ten minutes to cook.
What you will need:
- 2 cans condensed tomato soup (10 ounces each)
- 1/2 cup frozen corn kernels
- 1/2 cup frozen peas
- 9 ounces macaroni
- 1/2 cup grated cheddar cheese
How to make it:
Dilute the concentrated soup as per the instruction on the can. Warm it in a soup pot until it reaches a boil, stirring it often. Turn the heat down, cover, and simmer the soup for one minute.
Add the peas, corn and pasta and cook over a medium heat for eight minutes, or until the macaroni is tender. Serve with the cheddar cheese sprinkled over the top. You can serve this soup with some warm bread on the side too if you like, although the macaroni makes it filling.
